A++ Sweet Potato Bake

10 Egg Whites
1 Whole Egg
1 6 oz Sweet Potato
1/2 cup chopped onion
1/2 cup chopped bell pepper (red or green)
2 cups spinach leaves
2 tbsp. fat free parmesan cheese
1 tsp pepper
1 tsp Mrs. Dash tomato/basil (optional)
1/2 cup seasoned bread crumbs

Preheat oven to 400 degrees. Lightly coat a 13”x9” baking pan with cooking spray. Grate sweet potato into mixing bowl. Add remaining ingredients and stir. Let sit for 5 minutes, place into baking pan. Bake for 20 minutes or until solid. Toward the end of the cooking time, you can spray a little fat free cooking spray on the top and crank the oven onto broil for about 3 minutes to brown the top.
