Makes 1 loaf (12 slices)
¾ cup sugar
½ cup butter or margarine, softened
2 tbsp milk
2 tsp vanilla
1 cup mashed ripe banana (2 large)
2 cups all-purpose flour
1 ½ tsp baking powder
½ tsp baking soda
½ tsp salt
4 packages (1.5 oz) chocolate covered peanut butter candy cups, cut into small pieces
Heat oven to 350 degrees. Spray 9×5 inch loaf pan with baking spray.
In a large bowl, beat sugar and softened butter with electric mixer on medium speed until well mixed. Beat in eggs, milk, vanilla and bananas. Add all remaining ingredients except candy. Mix just until moistened. Reserve 2 tbsp cut up candy. With spoon, fold remaining candy. Pour into pan.
Bake 1 hour to 1 hour 10 minutes or until toothpick inserted in center comes out clean and top is dark golden brown. Cool 10 minutes on cooling rack. Loosen sides of loaf from pan; remove from pan, and place top side up on cooling rack. Cool completely, about 1 hour.
