I love pecans! Especially the candy coated nuts, I’m a sucker for them. But I have a hard time paying $10 for a tiny bag of them whenever at an expo or basketball game. Especially since you can make your own far less than $10 and have a lot more than what they give you! I buy my pecans and nuts usually in bulk at Costco or Sam’s club. You can get a 2lb bag of pecans for about $10. This recipe makes about 1/2 bag or so!
Cinnamon Sugar Pecans
Prep time 5-10 minutes
Bake time: 1 hour
1/2 cup brown sugar
1/2 cup granulated sugar
1 tablespoon cinnamon
1 tsp salt
1 egg white
1 tsp vanilla
3-4 cups Pecans
Preheat oven to 250 degrees. Line a baking sheet with parchment paper.
In a large bowl, mix together the brown sugar, granulated sugar, salt and cinnamon until well combined. In another bowl, whisk together the egg white and vanilla until frothy.
Add the nuts to the bowl of frothy egg white mixture and toss until nuts are coated. Then pour nuts into the bowl with the cinnamon and sugar. Stir and toss until they are well coated. Pour the nuts into the bowl with the cinnamon sugar mixture and toss until they are well coated.
Pour the nuts onto the prepared baking sheet and spread out evenly.
Bake for 1 hour, stirring every 15 minutes. Allow nuts to cool completely on baking sheet. Store in the airtight container at room temperature for 2-3 weeks.
