Gingerbread Waffles

Prep Time: 15 minutes
Bake Time: 20 minutes
Makes 6 waffles

2 cups whole wheat flour
2 tsp baking powder
2 tsp ground ginger
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp fine sea salt
1/4 tsp ground cloves
2 large eggs
1/4 cup molasses
1 stick butter, melted
2 cups boiling water

Preheat waffle iron. Preheat oven to 200 degrees.

Whisk together flour, baking powder, ginger, cinnamon, baking soda, salt and cloves in a large bowl. Whisk eggs in another bowl, then whisk in molasses and butter. Stir in egg mixture and boiling water into dry mixture. If batter is too thick to pour mixture. If batter is too thick to pour, thin slightly with additional hot water.

Lightly coat hot waffle iron with cooking spray. Pour 3/4 cup batter into hot iron and cook according to your waffle iron directions, approx. 3 minutes. Transfer waffles to a plate or cooking sheet to keep warm in oven. Continue cooking waffles and applying to cook sheet in oven.

Serve with butter and syrup!
