Place 6 large peaches in large pot of boiling water, for 1 minute. Remove from water, let cool enough to handle. Remove pits and coarsely cut. (approx. 6 cups)
Combine: peaches, 3 cups of sugar, 2 Tbsp chopped ginger, 1 Tbsp lemon juice and 1/4 tsp salt in large saucepan and simmer over medium heat, stirring occasionally, until thickened about 30 minutes. Ladle into mason jars and cool. Refrigerate overnight then store in freezer or fridge.
