Milkless Eggless Chocolate Cake

This is my mother’s recipe and I can just tell you that I LOVE this recipe. Plus it’s a huge bonus for those of you who can’t have dairy, because there is no dairy in this recipe. I have two different recipe sizes below, you can either make an 8×8 or a 13×9. Depending upon how many people are eating this cake I normally double it, because it goes extremely FAST!

Ingredients for 13″x9″ cake pan

3 cups flour
2 cups sugar
3/4 cup cocoa powder
2 tsp baking soda
1 tsp vanilla
1 tsp salt
2/3 cup oil (canola or vegetable)
2 cups cold water
2 Tbsp White Vinegar

Ingredients for 8″x8″ cake pan

1 1/2 cups flour
1 cup sugar
6 Tbsp cocoa powder
1 tsp baking soda
1/2 tsp vanilla
1/2 tsp salt
1/3 cup oil (canola or vegetable)
1 cup cold water
1 Tbsp White Vinegar

Sift the dry ingredients. Add water, oil, vinegar and vanilla. Mix well. Spray the pan with cooking spray. Bake at 350 degrees, 15-25 minutes for an 8″x8″ and 30-35 minutes for a 13″x9″ pan. Use a toothpick to determine if it’s cooked all the way through or not.

Note the batter will be thin.
