3/4 cup butter or margarine, softened
3/4 cup sugar
3/4 cup firmly packed brown sugar
2 large eggs
1 tsp vanilla
2 cups oats (quick, old-fashioned, uncooked)
1 1/2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 3/4 cup M&M Chocolate Chips
1 cup shredded coconut
1 cups coarsely chopped macadamia nuts (optional, can add a bit more flour if omit nuts)
Preheat oven to 350 degrees. Grease cookie sheets with cooking spay.
Cream butter and sugars until light and fluffy; beat in eggs and vanilla. Combine oats, flour, baking powder and baking soda; blend into creamed mixture.
Stir in remaining ingredients. Drop by rounded teaspoonfuls onto greased cookie sheets. Bake 13-15 minutes or until edges are golden brown. Cool 1 minute on cookie sheets; cool completely on wire racks. Store in tightly covered container.
Makes about 6 dozen cookies
