Peanut Butter Chip Cookies


1 1/2 cups packed brown sugar
1 cup crunchy peanut butter
3/4 cup butter
3/4 cup sugar
1/4 cup water
1 egg
1 1/4 tsp vanilla
2 cups rolled oats
1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1 cup semi-sweet chocolate chips


Preheat oven to 350 degrees. Spray cookie sheet with nonstick cooking spray.

In a large bowl, beat first 4 ingredients together, until creamy and well blended. Beat in water, egg and vanilla.

In medium bowl, mix remaining ingredients. Stir into peanut butter mixture until well blended.

Drop by heaping teaspoonfuls onto greased baking sheets. Bake 12-15 minutes or until lightly browned around edges. Cool completely on wire rack and store in airtight container.

Makes 4 dozen cookies
