My daughter is obsessed with peanut butter cookies, whenever her best friend comes over which is often they talk me into making peanut butter cookies. According to my daughter’s best friend “I make the best Peanut Butter Cookies.” I will take it, if you want to be know for something that’s something to be known for. Here’s my recipe to the “World’s best peanut butter cookies.”
1 cup peanut butter
1/2 cup butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
1 tbsp vanilla extract
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
Preheat oven to 325 degrees. Line 2 baking sheets with parchment paper (if desired). I like it for easy clean up! If you don’t have parchment paper, lightly spray the cookie sheet.
In a large mixing bowl, cream together peanut butter (I use whatever I have, normally crunchy), butter, sugar and brown sugar. Beat together until smooth and creamy, I recommend using a hand mixer if you have one.
In a small mixing bowl or in a sifter, combine flour, baking soda and salt. Stir in the flour mixture into the peanut butter mixture. Mix until well combined.
Using a cookie dough scooper or making the dough into 1 inch balls. Roll in white sugar, if you desire and place onto a baking sheet.
Using a fork, press down on each ball of dough to slightly flatten and create a crisscross pattern.
Bake each cookie for about 8-12 minutes, depending on how brown you want your cookies. I like them a little less done, I like them cooked on the inside and lightly crispy on the outside.
Transfer to a wire rack and let cool. Then transfer to an airtight container or eat as soon as they hit the wire rack.
These are always a hit whenever I make them!
